Southwestern Shepherd's Pie

THIS. WILL. NOT. DISAPPOINT. A few notes on this recipe — ground beef, turkey, or chicken can be used—and sour cream can be replaced with Greek yogurt if you’re not feeling SC, but let’s be real, what’s 60 calories? Corn and black beans (.5 cup) can be added, but I decided to make mine without—it’s easier on my digestive system. I served mine with a simple lemon and olive oil dressed arugula salad, but this dish can stand alone. This serves even better the next day and also acts as a good breakfast alongside eggs. I used too large of a dish, resulting in a thin bottom layer of meat blanketed by a top heavy sweet potato layer. Maybe this is your vibe, but I recommend using a 9x9 dish to get that perfect bite. If you choose to double your meat, don’t forget to double the rest of your ingredients! You’ll never see a recommendation on here for a cilantro garnish, but if you’re into that, this might be the place to add it.

INGREDIENTS:

  • 1tbsp evoo

  • 1lb ground beef/meat of choice

  • 1 green bell pepper (use whatever you have but I think this plays nicely off of the sweetness of the potatoes)

  • 1 cup chopped onion

  • .5 cup tomato sauce or diced tomatoes

  • 1 can green chiles

  • 1.5 lbs sweet potatoes

  • Spices:

    • 1 tbsp chili powder

    • 1 tsp cumin

    • 1 tsp (or half) of cinnamon 

    • Salt, pepper to taste

    • Dash cayenne

  • Garnishes:


MAKE ME:

PREHEAT THE OVEN TO 400 DEGREES.

  1. Place sweet potatoes in a saucepan with water to cover. Bring to a boil, reduce heat, and simmer for 30 minutes, or you can bake them!

  2. Heat oil in a large pan over medium heat.

  3. Add onion and bell pepper; cook, stirring, for 10 minutes, until softened. Raise heat to medium-high; add meat and brown for 5 minutes.

  4. Add spices; cook, stirring, for 3 minutes. Add tomatoes; simmer until liquid reduces, 15 minutes. Add mixture to dish.

  5. Mash sweet potatoes with a dash of cinnamon. Add a dairy of your choosing if you’d like—butter/milk, thought not necessary.

  6. Spread mash over meat mixture and and bake for 30 mins or until top of potatoes are looking crispy! You might need to broil for a minute.

  7. Let rest for ~5-10 minutes, then slice and serve.
